Baked Zucchini Recipe From Mexico

Cooking Time: 30 minutes
1 tablespoon olive oil
1-1/2 pounds zucchini, cubed
1/2 cup chopped onion
1/2 teaspoon garlic salt
1/2 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon cayenne pepper, or to taste
1/2 cup cooked long-grain rice
1/2 cup cooked pinto beans
1-1/4 cups salsa
3/4 cup shredded Cheddar cheese
1) Lightly grease baking pan of air fryer with olive oil. Add onions and zucchini andfor 10 minutes, cook on 360
oF. Halfway through cooking time, stir.
2) Season with cayenne, oregano, paprika, and garlic salt. Mix well.
3) Stir in salsa, beans, and rice. Cook for 5 minutes.
4) Stir in cheddar cheese and mix well.
5) Cover pan with foil.
6) Cook for 15 minutes at 390
oF until bubbly.
7) Serve and enjoy.
