Blueberry Overload French Toast

Cooking Time: 45 minutes
1 (8 ounce) package cream cheese, cut into 1-inch cubes
1 cup fresh blueberries, divided
1 cup milk
1 tablespoon cornstarch
1/2 cup water
1/2 cup white sugar
1/2 teaspoon vanilla extract
1-1/2 teaspoons butter
2 tablespoons and 2 teaspoons maple syrup
6 eggs, beaten
6 slices day-old bread, cut into 1-inch cubes
1) Lightly grease baking pan of air fryer with cooking spray.
2) Evenly spread half of the bread on bottom of pan. Sprinkle evenly the cream
cheese and ½ cup blueberries. Add remaining bread on top.
3) In a large bowl, whisk well eggs, milk, syrup, and vanilla extract. Pour over bread
4) Cover air fryer baking pan with foil and refrigerate overnight.
5) Preheat air fryer to 330
oF.6) Cook for 25 minutes covered in foil, remove foil and cook for another 20 minutes
or until middle is set.
7) Meanwhile, make the sauce by mixing cornstarch, water, and sugar in a saucepan
and bring to a boil. Stir in remaining blueberries and simmer until thickened and
blueberries have burst.
8) Serve and enjoy with blueberry syrup.
