Baked Rice, Black Bean and Cheese

Cooking Time: 62 minutes
1 cooked skinless boneless chicken breast halves, chopped1 cup shredded Swiss cheese
1/2 (15 ounce) can black beans, drained
1/2 (4 ounce) can diced green chile peppers, drained
1/2 cup vegetable broth
1/2 medium zucchini, thinly sliced
1/4 cup sliced mushrooms
1/4 teaspoon cumin
1-1/2 teaspoons olive oil
2 tablespoons and 2 teaspoons diced onion
3 tablespoons brown rice
3 tablespoons shredded carrots
ground cayenne pepper to taste
salt to taste
1) Lightly grease baking pan of air fryer with cooking spray. Add rice and broth.
Cover pan with foil cook for 10 minutes at 390
oF. Lower heat to 300
oF and fluff
rice. Cook for another 10 minutes. Let it stand for 10 minutes and transfer to a
bowl and set aside.
2) Add oil to same baking pan. Stir in onion and cook for 5 minutes at 330
3) Stir in mushrooms, chicken, and zucchini. Mix well and cook for 5 minutes.
4) Stir in cayenne pepper, salt, and cumin. Mix well and cook for another 2 minutes.
5) Stir in ½ of the Swiss cheese, carrots, chiles, beans, and rice. Toss well to mix.
Evenly spread in pan. Top with remaining cheese.
6) Cover pan with foil.
7) Cook for 15 minutes at 390
oF and then remove foil and cook for another 5 to 10
minutes or until tops are lightly browned.
8) Serve and enjoy.
