BBQ Pineapple ‘n Teriyaki Glazed Chicken

¼ cup pineapple juice
¼ teaspoon pepper
½ cup brown sugar
½ cup soy sauce
½ teaspoon salt
1 green bell pepper, cut into 1-inch cubes
1 red bell pepper, cut into 1-inch cubes
1 red onion, cut into 1-inch cubes
1 Tablespoon cornstarch
1 Tablespoon water
1 yellow red bell pepper, cut into 1-inch cubes2 boneless skinless chicken breasts, cut into 1-inch cubes
2 cups fresh pineapple cut into 1-inch cubes
2 garlic cloves, minced
green onions, for garnish
1) In a saucepan, bring to a boil salt, pepper, garlic, pineapple juice, soy sauce, and
brown sugar. In a small bowl whisk well, cornstarch and water. Slowly stir in to
mixture in pan while whisking constantly. Simmer until thickened, around 3
minutes. Save ¼ cup of the sauce for basting and set aside.
2) In shallow dish, mix well chicken and remaining thickened sauce. Toss well to
coat. Marinate in the ref for a half hour.
3) Thread bell pepper, onion, pineapple, and chicken pieces in skewers. Place on
skewer rack in air fryer.
4) For 10 minutes, cook on 360
oF. Halfway through cooking time, turnover skewers
and baste with sauce. If needed, cook in batches.
5) Serve and enjoy with a sprinkle of green onions.
